Cooking the Potatoes
In a medium pot, boil 3 large diced potatoes. Cook until the potatoes become tender. Drain in a colander and set aside if you want to use the same pot to cook up the bacon. If not, drain the potatoes and leave them in a medium pot. You can check the tenderness of the potatoes by inserting a fork into a potato to tell if it is hard or soft. If it is hard then boil for a few more minutes. You want the potatoes to be soft but not mushy.
Cooking the Bacon
In the medium pot, you used to cook the potatoes or a medium skillet, cook up a 16 ounce package of bacon that has been chopped or diced and ¼ diced onion in 1 tablespoon of oil or lard. Cook until golden.
Add in 4 ounces mild diced green chilies. Stir together
Add 1 cup of flour to make a roux that helps thicken the soup. You also get a nice bacon flavor in the soup when you use the bacon grease and flour to create the roux or base for the soup.
Combining the Soup
Add the cooked potatoes and bacon with 5 cups milk (you can use half and half if you want the soup to be a little more creamier) and 2 tablespoons Chugwater Chili Green Chili Seasoning (if you do not want it to be as spicy do 1 and 1/2 tablespoons of the green chili seasoning), and 1/4 teaspoon of salt in the medium pot. Stir together and bring to a simmer. Simmer until the soup has thickened.

The Green Chili Bacon Potato Soup was delicious! I made it slightly different by cooking the bacon, sautéing the potatoes & onion in the drippings with butter, then boiling the potato, onion, & green chili mixture in a couple of cups of chicken stock for 10 minutes. Meanwhile I mixed 1TBSP flour for every cup of liquid, 6 TBSP. I could have cut it to 5. Anyway, I added the flour, milk, & Green Chili seasoning to the potato mixture & cooked till thickened. This is the one pan method! Thanks Chugwater!
