Chili Frito Pie

This chili Frito pie recipe is a fun and easy meal to make. It can also be nostalgic for people who grew up with this classic recipe in schools and at home. Our Chugwater Chili Seasoning makes a flavorful chili that is then added on top of Frito corn chips with cheese to create a tasty meal. This will be a new favorite meal or an easy way to use up any leftover chili.

Chili frito pie is a classic recipe that many in the Midwest grew up eating. It is a favorite dish served in schools and is easy to make. The main layer is firto corn chips then you top it with chili, cheese, and your favorite toppings to create a tasty meal. It is also a great way to use up any leftover chili you might have or create a budget-friendly meal that can serve many. 

Our chili frito pie recipe features our signature Chugwater Chili to create a flavorful meal. Chugwater Chili is another classic meal that many people in Wyoming have grown up eating. It is quick, easy, and simple to make. But it also creates a large batch and is great as leftovers. This frito pie recipe is one of many fun ways to use your Chugwater Chili. 

Making Chugwater Chili 

In a medium pot, brown 1 pound ground beef and drain the excess fat. 

Stir in 3 rounded tablespoons of Chugwater Chili Seasoning or Chugwater Chili Hot Chili Seasoning if you want it spicier. 

Then add a 15-ounce can of tomato sauce and 15 ounces of water. I usually rinse the tomato sauce can with water and add that to the pot. This helps clean the leftover tomato sauce out of the can and allows you to use all of the sauce in the chili.  Bring to a boil. While stirring so you do not burn it. Reduce the heat and simmer for 30 minutes, stirring occasionally.

 Add in two 15-ounce cans of pinto beans undrained and return to a simmer.

If you want the chili thicker then add less water or drain the pinto beans. 

Assembling the Frito Pie 

Layer frito corn chips on the bottom of your plate. 

If you want it extra cheesy add a layer of shredded cheese on top of the chips. 

Next, add a layer of prepared Chugwater Chili. 

Then add a layer of shredded cheese. 

If you want the cheese to melt more you can heat this up in the oven for about 5 minutes at 350 degrees. 

Serving Chili Frito Pie 

This frito pie recipe is super easy to serve. You just need to assemble your base then you can add your favorite toppings to it. This can be served as a weekday or weeknight dinner, at parties or potlucks, and even just as a quick snack. Here are some toppings that are great with chili frito pie.

  • Dollop of Chugwater Chili Dip or sour cream
  • Diced tomatoes 
  • Diced onions
  • Chopped green onion 
  • Sliced jalapenos 
  • Sliced black olives
