Our bacon-wrapped shrimp recipe uses only a few ingredients to make a quick and easy appetizer or meal. The combination of our red pepper jelly and pork and chicken rub creates a fun sweet and savory flavor. It is also easy to serve and great if you want to serve a fun dish at parties. It is also great for a fun shrimp meal when served with rice, salad, fruit, or vegetables.
How to Pre-Prepare the Bacon
Bacon can take some time to cook in the oven. We want the bacon to be cooked along with the shrimp in this recipe but not to have overcooked shrimp so we are going to pre-cook the bacon before wrapping the shrimp.
Place about 10 slices of bacon on a foil-lined baking sheet (this helps with clean up and to keep the bacon from sticking to the baking sheet) and bake at 400 degrees for 8 minutes until the bacon is partially cooked and but still bendable. If you want some extra smoky chili flavoring in the bacon you can sprinkle the bacon with Chugwater Chili Pork and Chicken Rub.
Remove and slice the bacon strips in half if you are using extra-large shrimp. If you use large shrimp you can cut the bacon into thirds. You want enough bacon to wrap around the shrimp but not too much where you are double wrapping around the shrimp.
Seasoning the Shrimp
Mix ½ cup of melted butter with 2 tablespoons Chugwater Chili Pork and Chicken Rub.
Toss about 16-20 large or extra large peeled and deveined thawed raw shrimp with the seasoned butter until all shrimp have been seasoned. Or baste both sides of the shrimp with the seasoned butter.
Assembling the Bacon Wrapped Shrimp
Wrap each extra large shrimp with half a piece of bacon and secure with a toothpick. If you use large shrimp then use a third of a slice of bacon. You want to wrap the bacon around but not double wrap the bacon. Using a toothpick to secure the bacon can also help with serving the shrimp. Repeat until all shrimp has been wrapped.
Baking the Bacon Wrapped Shrimp
Place the wrapped shrimp on a baking sheet that has been lined with foil and has been sprayed with cooking spray. This will help with preventing sticking and with quicker clean up.
Bake at 400 degrees for about 8 minutes until the shrimp has cooked and the bacon is golden.
Remove from the oven and baste each shrimp with heated Chugwater Chili Red Pepper Jelly. Heating the red pepper jelly to liquefy it helps with basting it on the shrimp and bacon. You can just heat it in a microwave-safe dish for about 30 seconds in the microwave.
You can also control how sweet you want the bacon-wrapped shrimp by how much red pepper jelly you baste on.
Return to the oven for about 2 minutes to caramelize the jelly on the shrimp.
Remove from the oven and serve.
Grilling Option:
Heat your grill to 375 degrees. Place the bacon-wrapped shrimp on the grill and cook for about 15 minutes or until the bacon finishes cooking and the shrimp turns pink. Baste with the red pepper jelly and cook for another 5 minutes or until the red pepper jelly gets caramelized on the bacon and shrimp.
