Zucchini Corn Sauté

This easy zucchini and corn sauté is a delicious side dish to accompany your favorite meal. Our chili seasoning is added to corn, zucchini, onion, and jalapeno to create an explosion of flavor for your taste buds.

Finding a new side dish that can be added to your favorite meal is always a fun adventure. There are so many different side dishes out there. Ranging from the classic potato-based side dishes like fried or baked potatoes to green beans, carrots, or broccoli. This new vegetable side dish recipe is great for breaking away from the norm and trying something new that you can customize for your audience or take to a potluck meal.

This is also the perfect dish if you have a garden that is abundant with zucchini. Or if you like to get fresh vegetables at the farmer's markets in your town. Then you just need some of our chili seasoning, butter, and you have a quick, easy, and delicious side dish to enjoy any time of the year. Here is how to make our easy but flavorful zucchini and corn sauté.

Sauté the Onion, Butter, and Jalapeno

In a medium skillet, you will need to sauté the 2 Tbs butter with ½ onion diced (Yellow or red work the best. If you want a stronger onion flavor use the red onion.) and 1/2 jalapeno diced (if you do not like a lot of spice then you can decrease the amount of jalapeno you add or even leave out the jalapeno). Cook until the pepper and onion become tender. This should be about 10 minutes.

Add in the Vegetables

Next, you will need to add in 2 cups of frozen sweet corn or fresh sweet corn that has been cut off the cob and 3 cups diced fresh zucchini. Cook until the corn and zucchini become tender. This should be about 10 minutes.

Season the Zucchini and Corn Sauté with Chili Seasoning

Now take 2 Tbs of our chili seasoning and mix into the zucchini and corn sauté. Let cook for about 5 minutes then you are ready to serve.

How to Serve the Corn and Zucchini Sauté

Now that you have made your zucchini and corn sauté it is time to serve it. You can sprinkle chopped cilantro and Cotija cheese on top of the sauté to add some extra flavor. This is a great side dish recipe that can be served with a variety of main dishes. You can serve it with beef, pork, chicken, or even tofu. Zucchini Corn Sauté

This easy zucchini and corn sauté is a delicious side dish to accompany your favorite meal. Our Chugwater Chili seasoning is added to corn, zucchini, onion, and jalapeno to create an explosion of flavor for your taste buds.

Ingredients:

  • 2 tbs butter
  • 3 cups fresh zucchini diced
  • 1 onion diced
  • 1/2 jalapeno diced
  • 2 cups frozen or fresh corn
  • 2 tbs chili seasoning
Optional
  • Chopped cilantro
  • Cotija Cheese

Instructions:

  1. In a medium skillet saute the onion with the butter and jalapeno. Cook until the onion becomes soft and translucent.
  2. Add in the frozen corn and zucchini. Cook for about 10 minutes until zucchini has softened.
  3. Add in the chili seasoning and stir until vegetables are coated. Cook for 5 minutes.
  4. Serve hot with cilantro and cotija sprinkled on top.
