In a large bowl mix together one 15-ounce can of cream corn, 8.5 ounces or 1 ½ cups cornbread mix (We are going to use a homemade cornbread mix for this recipe. Instructions below on how to make the mix.), 1/2 cup milk, 1 large beaten egg, 2 tablespoons olive oil, 4 ounces drained green chilies, 2 tablespoons Chugwater Chili Green Chili Seasoning, and 1 cup shredded Monterey Jack or Pepper Jack cheese (the Pepper Jack makes the cornbread spicier for those who like more heat).
Mix until all ingredients are blended together.
How to Make Homemade Cornbread Mix
In a medium bowl combine 1 ⅓ cup flour, 1 cup yellow corn meal, 2 tablespoons of sugar, 1 tablespoon baking powder, and ½ teaspoon salt. Mix together and store in an airtight container. This is if you do not have pre-mixed cornbread mix and want to make some from scratch.
Baking the Green Chile Cornbread
Add green chili cornbread mixture to an 8x8 baking dish that has been sprayed with cooking spray. Spread it out evenly in the baking dish.
Bake for 40-50 minutes at 400 degrees or until fully cooked. You can check this by inserting a toothpick into the middle. If it comes out clean and not gooey it is finished. If it comes out gooey then you will need to keep baking the cornbread.
