It is also great for meal prepping or feeding a crowd.
Our green chile chicken chili combines our green chili seasoning with chicken, diced green chilies, and beans in a creamy green chile flavored sauce. This is a simple, easy and quick to make chili recipe. If you like a chicken chili this will become a new favorite to make on a cool day or when you just want some tasty chicken chili.
Making the Creamy Green Chile Chicken Chili
In a medium pot, sauté 2 cans of mild diced green chilies with ½ an onion that has been diced and cook until the onion becomes translucent.
Add in 3 tablespoons of Chugwater Chili Green Chili Seasoning and stir until combined with the green chilies and onion. If you want it more mild then you can decrease to 2 tablespoons of the seasoning.
No add in 16 ounces chicken broth, 3 cups shredded chicken ( I usually shred a cooked rotisserie chicken), ½ cups whole kernel corn, and 2 15-ounce cans white great northern beans.
Stir and simmer for 10 minutes.
If you choose to use chicken breasts you can simmer them in the chicken broth mixture until they are cooked through and you can shred them.
Add in 1 brick of cream cheese (usually if I dice the cream cheese it melts in quicker). Simmer and let the cream cheese melt into the chili. Stir occasionally to mix the cream cheese in.
Slow Cooker Option:
In a medium pot, sauté 2 cans of mild diced green chilies with ½ an onion that has been diced and cook until the onion becomes translucent.
Add in 3 tablespoons of Chugwater Chili Green Chili Seasoning and stir until combined with the green chilies and onion. If you want it more mild then you can decrease to 2 tablespoons of the seasoning.
Then add all ingredients to the slow cooker and cook on low for 6 hours or high for 4 hours. Stir occasionally.
If you choose to use chicken breasts do not put the cream cheese in until you have cooked the chicken breasts through and are able to shred them.

This creamy green chile chicken chili is easy to make and also easy to serve. You can serve it with crackers, crushed tortilla chips, shredded cheese, or some extra sour cream. Serve it on cold winter days or when you want a fun chicken chili to eat. It is also great for meal prepping because you can cook a lot and portion it out easily plus this recipe is packed with protein too.
