Chili Potato Skins

This easy chili potato skin recipe is a flavorful appetizer, snack, or dinner recipe. Our Chugwater Chili is added to potato skins with shredded cheese to create a cheesy chili treat. It will quickly become a fun new favorite recipe to share with others or meal prep for yourself.

Potato skins are a super fun appetizer to serve. They can also be a full meal in themselves. These fun potato treats are typically a potato shell filled with cheese, and meat and topped with fun toppings. They are often found on restaurant menus as the classic shredded cheese and bacon versions or sometimes they have a fun twist on them like pulled pork topped. 

Our chili potato skins take our quick and easy Chugwater Chili and add it as the main topping filling the potato skins. Add shredded cheese and you have a fun cheesy chili treat. Plus they are fun because you can serve a variety of toppings with them and customize them to your liking. This will quickly be one of your new favorite ways to enjoy Chugwater Chili! 

Making Chugwater Chili 

In a medium pot, brown 1 pound ground beef and drain the excess fat. 

Stir in 3 rounded tablespoons Chugwater Chili Seasoning or Chugwater Chili Hot Chili Seasoning if you want it spicier. 

Then add a 15-ounce can of tomato sauce and 15 ounces of water. I usually rinse the tomato sauce can with water and add that to the pot. This helps clean the leftover tomato sauce out of the can and allows you to use all of the sauce in the chili.  Bring to a boil. While stirring so you do not burn it. Reduce the heat and simmer for 30 minutes, stirring occasionally.

 Add in two 15-ounce cans of pinto beans undrained and return to a simmer.

If you want the chili thicker then add less water or drain the pinto beans. 

Making the Potato Skins 

In the oven bake foil-wrapped whole potatoes at 425 degrees for 45 minutes or until the potatoes start to soften. 

Pull them out and slice them in half lengthwise. 

Scoop out the insides to create a cavity that can be filled with cheese and chili. 

Add cheese then a scoop of chili then more cheese to the cavity of the potato skins. 

Bake at 350 degrees for 10 minutes until the cheese has melted. 

Now you are ready to serve. 

Serving Chili Potato Skins 

This is a fun and easy potato skin recipe. It can be served as an appetizer, snack, or meal. You can even create a potato skin bar and have the chili cheese-filled potato skins ready for guests at a party to put their own toppings on top and enjoy. Here are some fun toppings to add to your chili potato skins. 

Chili Potato Skin Toppings: 

  • Dollop of Chugwater Chili Dip or sour cream 
  • Chopped green onion 
  • Diced tomatoes 
  • Sliced olives 
  • Sliced jalapenos
