Cowboy Stew

This cowboy stew recipe is a fun, easy,  and hearty stew to enjoy any time of the year. Our chili seasoning and pork and chicken rub are combined with 3 kinds of meat, beans, and vegetables to create a fun explosion of flavors. This stew recipe is a hybrid of a stew with some aspects of a chili in it. You will find this is a new favorite stew recipe.

Stews are so much fun to make because they are packed with protein and vegetables. They are also a complete meal in themselves. You can also use a variety of meats from beef stew meat to wild game to ground beef or turkey to make your stews. You can even customize your favorite vegetables from potatoes to carrots to corn and much more. They are also very filling and hearty. Plus they can be made and enjoyed year round. Or just simply on a cold winter day when you want to have something delicious to warm you up. 

Our cowboy stew recipe is a fun and unique twist on traditional stew recipes. This recipe combines a variety of meats and vegetables to create a tasty and fun meal. Cowboys in the past would combine whatever ingredients they had to make hearty meals to keep them alive and working. This cowboy stew recipe is a modern twist with our chili seasoning and pork and chicken rub on this traditional way of making stews.

Preparing the Meat  

In a medium pot, cook up 5 stripes of chopped bacon until crispy. Pull from the pot and drain.

In the same pot brown up 1 pound ground beef and ½ onion that has been diced. Cook until the meat is browned and the onion is translucent.

Add in ½ a package of sliced smoked sausage and the cooked bacon. Cook until sausage is heated through.

Then add in 2 rounded tablespoons of Chugwater Chili Seasoning and 1 tablespoon of Chugwater Chili Pork and Chicken Rub. Stir until the meat is coated in the seasoning.

Adding in the Vegetables 

Add in 1 large potato that has been diced into bite-sized pieces, a 15-ounce can of diced tomatoes with green chilies, ½ cup whole kernel corn, a 15-ounce can pinto beans, a 15-ounce can of kidney beans, and 16 ounces of beef broth.

Optional vegetable add ins include green beans, peas, and carrots. 

Cooking the Cowboy Stew 

Simmer until the potatoes are tender and the stew has thickened. Stir occasionally.  If you want the stew thicker create a cornstarch slurry with a tablespoon of cornstarch and 2 tablespoons of water then add to the stew.

How to Serve Cowboy Stew 

This cowboy stew recipe is super easy to serve. You can even add it to a slow cooker to keep warm if you are serving it at a tailgating event or party. Or just serve hot straight from the pot. You can also add it into small microwave-safe bowls and meal prep with it for the week. This stew is great served with rolls, sliced bread, cornbread, or crackers. You can also add a small salad as a side if you want extra vegetables, or you can even serve your favorite dessert and create a full meal.
