Potatoes are a very common vegetable that are served with many meals. They are fun because you can turn them into almost any kind of side dish or main dish. Our cheesy bacon potato rounds recipe is a fun twist on your traditional baked potato rounds or some call them chips due to their shape. We add our smoky chili pork and chicken rub with cheese and bacon to create a fun flavor explosion. These will be a fun new side dish, appetizer, or snack.
Preparing the Potatoes
Wash 3 large russet potatoes. You can leave the skins on as long as you wash them with water.
Slice into rounds that are about a half inch thick. You want them thin but not too thin.
Place on a baking sheet.
Seasoning the Potato Rounds
Melt 1 stick of butter. Baste both sides of the potato rounds with the melted butter.
Sprinkle Chugwater Chili Pork and Chicken Rub on both sides. You can sprinkle as little or as much as you want.
You can even mix about 1 ½ tablespoons of the pork and chicken rub with the butter before basting to season the potato rounds.
Baking the Potato Rounds
Bake the potato rounds at 425 degrees for about 30 minutes or until they start to golden and are softened.
Note: If you want to speed up the process and cut out some time you can pre-boil the potatoes to soften them then butter and season them with the Chugwater Chili Pork and Chicken Rub before baking. This will reduce the cooking time to about 15 minutes in the oven instead of 30 minutes.
Adding the Good Stuff
Pull the potatoes from the oven and add shredded cheddar cheese on top and then add the cooked and chopped bacon pieces on top of the cheese. If you don’t feel like cooking up bacon you can use store-bought bacon bits instead.
Put back in the oven and bake until the cheese has melted.
