This green chili mac and cheese is a new flavorful twist on the traditional mac and cheese. Seasoned with our green chili seasoning this fun version of mac and cheese is the perfect treat to enjoy anytime.
Mac and cheese is an ultimate cheesy favorite food dish that has been made into many different versions over the years. You can get fried mac and cheese bites, baked mac and cheese, different flavored mac and cheeses, cauliflower mac and cheese, and so much more. Mac and cheese or in some places know as macaroni and cheese is a fun cheesy treat that many people love.
We have created this fun green chili mac and cheese for those who want to explore some new mac and cheese options. We combine our green chili seasoning with cheese, macaroni noodles, and green chilies to create an explosion of flavors you will enjoy.
Cooking the Macaroni Noodles
In a medium pot, add water to fill about half the pan, a pinch of salt, and boil 2 ½ cups of macaroni noodles until tender. Depending on which brand you use there will be instructions on the box if you need help learning how to boil them.
Drain the noodles into a colander and set aside until you have finished making the cheese sauce.
Creating the Green Chile Cheese Sauce
It is time to make the cheese sauce for this mac and cheese.
In the same medium pot, sauté 4 oz diced green chilies in 2 tablespoons of butter. Cook until butter has melted and green chilies have become fragrant.
Add in 3 tablespoons of flour and whisk together.
Whisk in 2 cups milk and 2 rounded tablespoons of Chugwater Chili Green Chili Seasoning.
Add in 1 ½ cups of shredded Monterey jack cheese, and 1 ½ cups shredded sharp cheddar. Stir until cheese has melted to create a green chili cheese sauce.
Salt and pepper the sauce to taste. Or just add in ¼ teaspoon salt and a few shakes of pepper. It is up to your taste preferences.
Combining the Cheese Sauce and Macaroni Noodles
Now it is time to combine the cheese sauce and the cooked macaroni noodles. Stir the cooked noodles into the cheese sauce until all noodles are coated in cheese.
Baking the Mac and Cheese
Transfer the green chili mac and cheese to a medium baking dish and top with a ½ cup shredded Monterey jack and a ½ cup shredded sharp cheddar cheese. If you really like cheese, then you can add extra to the top if you want to.
Broil on hi until the cheese has melted and turns slightly brown on top.
