Preparing the Green Chili Rice
In a large bowl combine the 2 cups chicken broth, 8 oz cream cheese, 2 cups instant rice, 8 oz green chilies, ¼ diced onion, 2 tablespoons Chugwater Chili Green Chili Seasoning, salt, and pepper. Mix until blended.
Seasoning the Green Chile Chicken
Season 5 thawed chicken breasts with the remaining ½ tablespoon Green Chili Seasoning. Make sure each side is coated with some of the green chili seasoning.
Preparing the Casserole for Baking
Place the rice mixture on the bottom of a baking dish that has been sprayed with cooking spray.
Then place the seasoned chicken breasts on top of the rice.
Now you are ready to back this casserole dish.
How to Bake Green Chile Chicken and Rice Casserole
Bake covered at 400 degrees for 40-50 minutes or until the chicken is cooked through. You can check if the chicken is done by slicing into one of the breasts to see if it is still pink on the inside or if it has cooked through.
About 10 minutes before the dish is done add 2 cups of shredded cheese on top. If you like a little extra cheese, you can add it if you want. Let melt.

Green Chili Chicken and Rice Casserole
Ingredients
- 5 chicken breasts, thawed
- 2 cups chicken broth
- 2 1/2 cups instant rice
- 8 oz cream cheese
- 8 oz canned diced/chopped green chilies
- 2 cups Monterey jack cheese or fiesta blend cheese, shredded
- 2 1/2 tablespoons Chugwater Chili Green Chili Seasoning
- ½ teaspoon salt
- ½ teaspoon pepper
- ¼ onion diced
Instructions
- Heat the oven to 400 degrees.
- In a large bowl combine the chicken broth, cream cheese, diced onion, rice, green chilies, 2 tablespoons Chugwater Chili Green Chili Seasoning, salt, and pepper. Mix until blended.
- Place in a casserole dish that has been sprayed with cooking spray.
- Season the chicken breasts with the remaining ½ tablespoon Green Chili Seasoning then place the chicken breasts in the mixture.
- Bake covered for 40-50 minutes or until the chicken is cooked.
- 10 minutes before it is done cover with cheese and let melt.
- Serve with your favorite side dish.
