This easy-to-make cucumber salsa is a refreshing way to enjoy salsa any time of the year. Cucumbers are combined with a few other tasty ingredients including our Chugwater Chili Seasoning to create a unique and fun combination of flavors.
Salsa is always a fun treat to make or buy. It is an easy snack that can be simply enjoyed with some tortilla chips or added to the main meal. Besides, there are so many different types of salsa that you can enjoy from traditional tomato salsa to fun fruit salsas like mango salsa. The options are endless.
Cucumber salsas are a refreshing, healthy, and flavorful type of salsa to enjoy. You can make it ahead of time to take to gatherings or keep a bowl in your refrigerator to enjoy when you want a healthy and tasty snack. Our chili seasoning adds some spicy flavor to this salsa and gives it a nice flavor.
This healthy and refreshing salsa is also great for any time of the year. In the summertime, you can use fresh ingredients from your garden to make a batch. Or in the wintertime, you can find all the ingredients easily available at your local grocery store’s produce section to make some up to snack on.
Preparing the Salsa Ingredients
Peel, de-seed, and dice into small chunks, 2 medium cucumbers. Add into a medium bowl.
De-seed and dice 3 Roma tomatoes and add to the bowl.
Tip: I have found that using a metal spoon is an easy way to scoop the seeds out of the middle of the cucumbers and tomatoes.
Take ½ large red onion, dice, and add to the bowl.
De-seed, and dice 1 large red bell pepper. Add to the bowl.
Chop up ¼ cup cilantro and add to the bowl. If you like more cilantro in your salsa you can always add more but if you are more sensitive to cilantro just add the ¼ cup or slowly add in more until you enjoy the taste.
Add 1 tablespoon minced garlic to the bowl. You can use fresh garlic cloves or already pre-minced garlic out of the jar.
Mix the vegetables together with a spoon.
Mixing the Cucumber Salsa
Once you have prepped the vegetables and have added them to the bowl it is time to season the salsa. You will need to mix in 3 tablespoons of lime juice 1/2 teaspoon salt, and 2 tablespoons of Chugwater Chili Seasoning.
If you want a spicier salsa, you can use the Chugwater Chili Hot Chili Seasoning to season the salsa. You can also add in diced jalapenos if you wish.
Mix until the chili seasoning is well blended with the salsa ingredients. You can serve this treat right away or place it in the refrigerator overnight.
Serving Cucumber Salsa
Cucumber salsa is a wonderful treat that can be served in a variety of ways. You can eat it as a snack or appetizer with your favorite tortilla chips. You can also add it to tacos, burritos, or fajitas. This salsa is very easy to make when you want something refreshing and fun to eat. You can let your imagination run free and try it out on or with your favorite meals.

Ingredients
- 2 cucumbers, peeled, de-seeded, and diced
- 3 Roma tomatoes, de-seeded and diced
- ½ large red onion, diced
- 1 red bell pepper, diced
- 1 tablespoon garlic, minced
- 3 tablespoons lime juice
- ¼ cup cilantro, chopped
- 1/2 teaspoon salt
- 2 tablespoons Chugwater Chili Seasoning or Chugwater Chili Hot Chili Seasoning
Instructions
- Combine the diced cucumber, tomatoes, red onion, bell pepper, minced garlic, and cilantro in a medium bowl.
- Mix in the lime juice, chili seasoning, and salt.
- Stir until all ingredients are covered in the chili seasoning.
- Enjoy with tortilla chips.
