In a medium pot, brown 1 pound of diced pork. You can also cook and shred 1 pound of pork if you like shredded pork in your green chili. If you do not like pork or cannot eat it then try adding 1 pound of chicken to the recipe.
Once the pork is browned, add in a 4 ounce can of diced green chilies (we usually use mild but if you want extra heat you can use medium or hot), 14 ounces canned tomatillos diced (if you use fresh tomatillos roast them in the oven for 10 minutes at 400 degrees until they start to brown, then dice and add-in), and 15 ounces of chicken broth and stir.
Tomatillo Substitute: Add in 3 diced green tomatoes with a teaspoon lime juice.
Now add in 3 tablespoons of Chugwater Chili Green Chili Seasoning. Stir together and simmer for 45 minutes.

I made this with pork steak that was diced and fried prior to adding the other ingredients. Very good flavor, and the slow simmer really helped thicken it.
