Spicy Grilled Zucchini

This spicy grilled zucchini recipe is a flavorful treat to make. Our steak rub adds a smoky and spicy flavor to the zucchini slices. This easy recipe will become your new favorite way to use up any zucchini you may have from your gardens or if you really want a fun zucchini treat.

Zucchini is a delicious and healthy treat that can be made into a variety of meals or dishes. From zoodles (zucchini noodles) to a classic fried zucchini this vegetable can be made into many tasty treats. However sometimes when you plant zucchini in the garden it can grow in abundance and you are left trying to find different ways to eat or gift the zucchini. That is why it is always fun to try out new zucchini-based recipes and see what you enjoy.

This easy spicy grilled zucchini creates a new way to cook up zucchini. It is a quick recipe using our smoky and spicy steak rub, that is not only tasty but healthy for you.  It is great for any time you feel like grilling or if you need to use up some zucchini. We have also added how to make this recipe on the stovetop in case you do not have a grill or are unable to use your grill.

Slicing the Zucchini

Slice 2 medium zucchini lengthwise into 1/3 inch thick strips. You can slice these in half if you prefer smaller slices. If you have larger zucchini you can slice them into 1/3 inch thick rounds and grill them.

Seasoning the Zucchini Slices

To season the zucchini, mix 2 tablespoons of Chugwater Chili Steak Rub and ¼ cup olive oil together. If you want them a little spicier you can always add more of the steak rub in with the olive oil.

Baste the spicy seasoned olive oil on each side of the zucchini slices.

How to Grill Zucchini

Heat your grill to 350 degrees. Place the seasoned zucchini slices on the grill and grill each side for about 4 minutes each side or until you see grill marks start to form and the zucchini becomes tender.

Skillet Cooked Spicy Zucchini

If you do not have access to a grill you can cook this recipe in a skillet on the stove. You just have to take your seasoned zucchini slices, place them in a skillet on medium heat and cook each side until golden or the zucchini slices become tender. This way you can enjoy this recipe year-round.

How to Serve Spicy Grilled Zucchini

Once you have finished grilling the spicy grilled zucchini it is time to enjoy it. This is a fun dish that can be enjoyed in many ways. You can serve it with any of your favorite main dishes or even just have a full meal out of the zucchini.

Ingredients

  • 2 medium zucchini
  • ¼ cup olive oil

Instructions

  1. Slice the zucchini lengthwise into 1/3 inch strips. You can slice these in half if you prefer.
