Prepping the Southwestern Broth
In a medium sized pot sauté, 2 tablespoons of olive oil,1 small diced onion, 1 diced red bell pepper, and 1/2 -1 diced jalapeno (If you like it spicy then use a full jalapeno. If you want it less spicy ten use a half jalapeno.). Cook until the onion becomes translucent and peppers become tender.
Next add in 32 ounces chicken broth, a 16 ounce can black beans, 1 cup frozen corn, 16 ounce can diced tomatoes with green chilies, and 2 tablespoons Chugwater Chili Seasoning.
Cooking and Shredding the Chicken
You will need to add in 2 thawed chicken breasts to the broth. Boil for 25 minutes until the chicken breast is cooked through.
Take out the chicken breasts, shred them with two forks, then add back into the pot.
Finishing the Southwest Tortellini Soup
Next add in 10 ounces cheese tortellini into the pot and simmer until they become tender. You can test this with a fork. If the fork easily stabs through the tortellini then it is ready.

Instructions
