Making the Sausage Cream Cheese Filling
Brown up 1 pound of pork sausage. Drain any grease and set aside.
In a medium bowl combine 8 ounces of softened cream cheese, 15 oz can diced tomatoes with green chilies, 2 tablespoons Chugwater Chili Seasoning and the cooked sausage. Mix until well combined.
Stuffing the Mini Peppers
Take mini sweet peppers or if you want larger peppers, use large red or orange bell peppers and cut them in half lengthwise. The sweet peppers are nice because they add a fun sweet and spicy flavor to this recipe. Remove the seeds but leave the stems.
Take a spoon and add the sausage and cream cheese mixture into the cavity of the peppers. Repeat until all the peppers are filled.
