We add a tasty and zesty southwest vinaigrette to diced cucumbers, red bell peppers, and onion to create a fun flavorful treat. This will quickly become a fun new go-to recipe you can enjoy.
Preparing the Vegetables
Dice 1 large cucumber into bite-sized pieces. I usually use an English cucumber. You can peel the cucumber if you wish or rinse and leave the skin on.
Deseed and dice a large red bell pepper into bite-sized pieces. You can also use other sweet peppers like the yellow or orange ones.
Dice ½ small red onion into bite-sized pieces.
Place the diced vegetables in a medium mixing bowl.
Making the Southwest Vinaigrette
In a small bowl whisk together 4 tablespoons olive or avocado oil, 3 tablespoons white wine vinegar, and 2 tablespoons Chugwater Chili Dip & Dressing Mix.
Combining the Salad
Pour the vinaigrette over the diced vegetables and toss until they are well coated.
Refrigerate for about 20 minutes or more to let the flavors infuse together.
