This easy baked vegetable taco recipe is an easy and healthy recipe that can be made year-round. Our chili seasoning adds a tasty and spicy taco flavor to a variety of colorful vegetables. This is a great recipe if you are on a plant-based diet, are vegetarian, or vegan.

Our chili seasoning is a great blend of spices that adds a nice spicy flavor to your tacos. It can be used on almost any taco meat from beef tacos to fish tacos and more. This vegetable taco recipe takes vegetables such as yellow squash, bell peppers, onion, and zucchini to create a fun vegan or vegetarian-friendly taco recipe. This recipe is a great summertime recipe when your gardens are producing these fun vegetables, but this vegetable taco recipe can be made any time of the year. You can usually find these vegetables in your local grocery store year-round if you do not have a garden.
Prepping the Vegetables
You will want to dice a medium zucchini, yellow squash, 1/2 onion, and red bell pepper into bite-sized pieces.
Seasoning the Taco Vegetables
In a medium bowl combine the diced vegetables with ¼ cup olive oil (you can use your preferred oil if you want) and 2 tablespoons Chugwater Chili Seasoning. If you prefer a spicier taco, you can use the Chugwater Chili Hot Chili Seasoning.
Stir until all the vegetables are coated in the oil and chili seasoning.
Baking the Vegetable Tacos
On a baking sheet that has been coated in foil (makes for easier clean up) and sprayed with cooking spray, spread the vegetables out onto one layer.
Bake at 400 degrees for 30 minutes or the until the vegetables have become tender. Stir halfway through.
How to Serve Baked Vegetable Tacos
Now that you have cooked your vegetables it is time to create your tacos. Serve with your favorite tortilla shells and taco toppings. You can also make a taco bowl by adding cilantro lime rice and seasoned black beans with it. Make burritos by adding some toppings, rice, and beans with the taco seasoned roasted vegetables. You can create a variety of meals with these summer taco vegetables.
