Cowboy Caviar

This easy Cowboy Caviar recipe is fun to make and full of flavor. Featuring an array of vegetables from corn to bell peppers, all seasoned with our chili seasoning, this is a treat! Try this appetizer with chips, on tacos, in burritos and much more.

Cowboy Caviar is easy to make. The hardest part of making this recipe is chopping your vegetables. You can make it ahead of time for potlucks or parties. This is not your traditional caviar. Nope, this is a delicious western treat that will have your taste buds and guests begging for more. 

Featuring our gourmet chili seasoning with a variety of vegetables that create a southwestern flavor, this appetizer is bound to bring you “the spice of western life.”

What Ingredients Do I Use for Cowboy Caviar?

Cowboy Caviar is great because you can choose which ingredients you want to use and customize it for who you are serving it to. For this recipe, you will need the following:

  • 2 cups diced tomatoes, fresh is preferred but canned may be used
  • 15 oz can black beans, drained and rinsed
  • 11 oz sweet corn, either canned or frozen
  • ½ red onion, diced
  • ½ cup green bell pepper, diced
  • ½ cup red bell pepper, diced
  • 1 jalapeno, diced
  • 1 cup cilantro, chopped
  • ½ cup olive oil
  • 2 Tbs sugar
  • 5 Tbs white wine vinegar
  • 2 Tbs lime juice
  • 2 ½ Tbs Chugwater Chili Gourmet Blend

Optional Ingredients:

  • Diced avocado
  • Black-eyed peas
  • Shredded cheese

Note: Some grocery stores carry pre-diced vegetables in their produce sections if you are in a hurry. If not, you can use a food processor to dice them or just dice by hand.

How to Make Cowboy Caviar?

Once you have your ingredients gathered you can start combining the ingredients. In a medium bowl combine the diced tomatoes, black beans, corn, diced red onion, diced bell peppers, and diced jalapeno together.

Next, in a small bowl whisk together the lime juice, olive oil, sugar, vinegar, and Chugwater Chili Gourmet Blend.  This creates a nice chili sauce to add to your vegetables. It also gives the cowboy caviar extra flavor.

Now pour the chili sauce over the ingredients in the medium bowl and stir together until all ingredients are coated in the sauce. Then stir in the chopped cilantro.

Cover the cowboy caviar and chill for at least an hour or overnight. This allows the seasonings in the sauce to infuse with the vegetables to create a flavorful treat for your taste buds.

Serving Cowboy Caviar

You will want to serve this appetizer chilled or at room temperature. Serve it with tortilla chips. You can also use it as a topping for tacos, burritos or seasoned chicken. This is a great recipe to serve at parties or potlucks. It makes a lot and is fun to eat!
