How to Sauté Vegetables in the Soup
In a medium-sized pot sauté 1 medium-sized diced onion, ½ diced jalapeno (if you want it more spicy use a whole jalapeno. If you do not like the heat add in some diced bell pepper instead.), 4 chopped garlic cloves, and 3 diced celery stalks in 3 tablespoons of vegetable or olive oil until the onion becomes soft or translucent.
Seasoning the Chili Lime Chicken Soup
Season the sauteed vegetables with 2 ½ tablespoons of Chugwater Chili Seasoning, 1 teaspoon of oregano, 1 teaspoon of cumin, ½ teaspoon of salt, and ½ teaspoon of pepper. Stir together.
Simmer the Chicken and Tomatoes
In the pot add in 1 chicken breast, 32 ounces of chicken broth, and 10 ounces of diced tomatoes with green chilies. Boil for 10 minutes then simmer the soup for 30 minutes.

Ingredients:
- 1 medium sized onion, diced

- ½ cup cilantro, chopped
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions:
- In a medium sized pot sauté the onion, jalapeno, garlic, and celery in the oil until the onion becomes soft or translucent.
- Season with the Chugwater Chili Seasoning, oregano, cumin, salt, and pepper.
- Add the chicken breast, chicken broth, and diced tomatoes with green chilies to the pot.
- Boil for 10 minutes, simmer for 30.
- Take the chicken breast out and shred then add the shredded chicken back to the pot with the lime juice and cilantro. Simmer about 5 minutes.
- Serve with a dollop of Chugwater Chili Dip and crushed tortilla chips on top. Add with your favorite salad recipe.
