Add in the poblanos, onion, and corn to create a southwestern flavored cream sauce that you will be making time and time again.
Roasting and Preparing the Poblano Peppers
Heat your oven to 425 degrees.
Take 3 poblano peppers and lightly coat with olive oil.
Place on a baking sheet. I prefer to use foil to line my baking sheets. It helps with clean-up so you do not have to scrape the pan clean every time.
Roast for 10-15 minutes or until the poblanos are browned on the outside. This makes it easy to peel the skin off.
Peel the skin off the poblano peppers and de-seed them. Now you can dice them up and set them aside.
Sautéing the Chicken and Vegetables
Slice 3 chicken breasts into thin strips. Season with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper.
Place into a medium skillet and sauté in olive oil until the chicken is fully cooked.
Add into the skilled ½ diced onion, 1 cup whole kernel corn, and the diced poblano peppers. Sauté until the onion becomes translucent.
Making the Poblano Cream Sauce
To make the cream sauce add 1 ½ cups of heavy cream and 2 tablespoons of Chugwater Chili Green Chili Seasoningwith the sautéed chicken and vegetables. Simmer for 10 minutes.
Next, add in 1 cup of shredded cheese. Either a Mexican/fiesta blend or cheddar blend. Stir into the cream sauce. Simmer for 5 minutes while occasionally stirring. If you like cilantro you can add ¼ cup of chopped cilantro to the cheesy cream sauce.

Ingredients
- 3 chicken breasts, thawed and sliced
- 3 Poblano Peppers, roasted and diced or sliced
- ½ onion, diced
- 1 cup whole kernel corn
- 1 ½ cups heavy cream
- 2 Tbs Chugwater Chili Green Chili Seasoning
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- 3 tablespoons olive oil
- 1 cup shredded cheese, Mexican blend, or a cheddar blend
Instructions
- Season the chicken breast slices with garlic powder, salt, and pepper.
- Place chicken breasts in a large skillet with olive oil. Cook until no longer pink.
- Add in the onion, corn, and poblano peppers. Sauté until the onion becomes translucent.
- Add in the cream, shredded cheese, and Chugwater Chili Green Chili Seasoning and simmer for 10 minutes. Stir occasionally.
- Serve over rice with your favorite side dish.
- Optional: Add in ¼ cup of chopped cilantro.
