Making the Creamy Green Chili Sauce
In a medium pot combine 1 pound of roasted pork or chicken, 4 ounces diced green chilies, 15 ounces of green enchilada sauce, 22 ounce can cream of chicken soup, 15 ounces diced tomatoes with green chilies, and 3 rounded tablespoons Chugwater Chili Green Chili Seasoning.

Assembling the Chicken Enchiladas
Season 2 cups shredded chicken with 1 1/2 tablespoons Chugwater Chili Green Chili Seasoning.
In a corn or flour tortilla (you can also try our homemade tortilla recipe) add a scoop of seasoned chicken, diced green chilies, cooked Spanish rice, drained and rinsed black beans, and a pinch of shredded cheese. You can add however many green chilies, beans, and rice as you wish. This recipe is easy to customize with the ingredients you have.
Roll the filled tortilla and place it in a baking dish that has been sprayed with cooking spray.
Repeat until the pan is filled.
Ladle the green chili sauce on top of the enchiladas (If you want them extra saucy you can add a little of the sauce into the tortilla.)
Add remaining shredded cheese on top.
Cover with aluminum foil.
Baking the Enchiladas
Bake the enchiladas at 350 degrees for 30 minutes or until the middle is cooked and the edges start to bubble.
