Zucchini is a vegetable that can be made into a variety of different recipes. You can make zoodles (zucchini noodles), fries, tots, bread, and so much more with it. It is also a vegetable that when grown in your garden can produce a lot of zucchini. Sometimes it seems like you end up with more zucchini than expected and have to find ways to either give it away (either by asking your friends if they want some or leaving it on your neighbor's doorsteps because you really don’t need the extra zucchini) or make some new recipes with it.
Our baked zucchini fry recipe is a flavorful way to enjoy your extra zucchini from your gardens, have a fun side dish to accompany your favorite meal, or as a snack when you want something fun to eat. The garlic and onion in our southwestern dip mix creates a great flavor when combined with the panko crumbs to bread these zucchini fries. This will quickly become a new favorite go-to recipe. It is tasty, healthy, and easy to make.
Preparing the Zucchini
You will want to take one medium-sized zucchini and slice it lengthwise. Then remove the seeds. I usually take a metal spoon and scoop the seeds out. Cut the zucchini into fry strips at whatever length you want. I find it best when you cut them into about 3-inch strips. If you make them too thick when slicing it will take longer to bake them. I usually make sure they are about ⅓ - ½ inch thick. It also allows for them to get crispier quicker. Once you have sliced the zucchini into strips set them aside.
Coating the Zucchini in the Panko
Now it is time to prepare your ingredients for adding breading to the zucchini strips.
In a small bowl beat together 2 large eggs then add about 2 tablespoons of milk and mix together. Set this aside.
On a small plate mix together 2 cups of plain panko bread crumbs and 3 tablespoons of Chugwater Chili Dip & Dressing Mix. If you want more seasoning you can add more or if you want less you can also add less. This is a great customizable recipe. Set this aside.
Put 1 cup of flour on another small plate.
Now it is time to coat the zucchini strip with the bread crumbs.
Take a zucchini strip and dip it into the flour, then the egg mixture, then the seasoned panko crumbs. Repeat until all zucchini strips are coated in the panko.
Place onto a baking sheet that has been sprayed with cooking spray or lined with foil. This will help with cleanup and prevent the strips from sticking to the sheet.
Baking the Zucchini
Heat your oven to 425 degrees. Place the baking sheet with the coated zucchini strips into the oven and bake for about 20 minutes or until the strips are starting to turn golden brown.
Air Fryer Zucchini Fry Option:
If you decide you want to cook these in the air fryer you will want to cook them at 400 degrees for about 6 minutes. Flip the strips and cook for about 6 more minutes or until they start to turn golden brown. If you flip them then you can get both sides golden and crispy.
How to Serve Baked Zucchini Fries
